This is going to be the last episode in my summer series, even though summer doesn’t technically end until September 21st. We all know and love my famous key lime pie recipe from my website so I wanted to develop a gluten & dairy free version for you all too. And secretly selfishly for myself as well. And this one came out perfectly! Recipe bellow: 💚🍋🟩 Recipe: For the crust - 1.5 cups organic raw unsalted walnuts (@olddogranch are my fave) 1.5 cups organic raw unsalted cashews (or pecans) 8 tablespoons of vegan butter (I like @montysnyc) 1/4 cup coconut sugar (or brown sugar) For the filling - 6 organic pasture raised egg yolks 1 can condensed OAT milk (I get mine at @wholefoods) 1/2 cup key lime juice or regular lime juice if you can’t find it Zest of 1 lime For the topping - 1 14oz can coconut cream (in the fridge overnight before) 2 tbsp maple syrup 1 tsp vanilla extract In a food processor, blend the nuts until fine crumbs. Add in your melted butter and coconut sugar and add it in to a pie dish and press in to shape. Bake at 375F for 10-12 minutes Now it’s time make your filling. In the bowl of a mixer with the whisk attachment, add in your 6 egg yolks and whisk until pale yellow. Then add in your can of condensed oat milk and mix until combined. And add in your lime juice slowly while whisking and then the zest of one lime. Add the filling in to the mixture and bake for 10 minutes to set the eggs. Then leave to cool completely and pop it in the fridge for a few hours or overnight. Once ready to serve, whip your coconut cream and add over the pie and add over some extra zest.
