With vineyards located in two areas, his wines emulate the tastes of the soils. ⁠ ⁠ Crisp apples, apricots and zesty lime, this Simphona is a wonderful and different example of Grillo that's hard to forget. ⁠ ⁠ Aged on skins in Chestnut barrels for around 7 months. Made from 100% Grillo from the Vineyards in Pietra Rinosa, the clay-based soil and proximity to the ocean gives this one a distinct saline finish.
