Gochujang Pasta š¶ļøš Honestly when it comes to anything with gochujang Iām sold, and in this dish it truly was delish š«¶ Salty, spicy, creamy and so satisfying!!
Recipe adapted from/inspired by the amazing @doobydobap š©š»āš³
Ingredients
250g linguine or pasta of choice
2 tbsp olive oil
5 cloves garlic, chopped
2 tbsp gochujang
1 tbsp tomato paste
1/3 cup dairy-free cream
1/2 cup reserved pasta water
1 tbsp vegan butter
Salt, to taste
Freshly cracked black pepper
Parlsey, to garnish
Method
1. Bring a large pot of salted water to the boil. Cook your pasta until al dente. Drain and reserve 1/2 cup of the pasta water.
2. In the meantime, heat olive oil over medium heat and fry garlic until softened and fragrant.
3. Add in the gochujang and tomato paste and fry for 1 minute. Pour in the cream and stir to combine.
4. Add in the cooked pasta along with the pasta water and cook until thickened and glossy. Season with salt to taste.
5. Transfer to a plate and finish off with black pepper and fresh parsley. You can also add parmesan on top if you have some on hand. Enjoy!
