Chop the peeled Zespri SunGold Kiwifruit into small pieces and place in a small bowl.​ 2. Add the sugar to the bowl and toss to coat. Cover the bowl and leave the fruit for at least 1 hour and up to overnight to macerate. ​ 3. Add the macerated fruit, lemon juice, and lemon zest to a pot and simmer for 30 mins to 1 hr.​ 4. Jar, refrigerate, and enjoy!​
