Grandma’s White Chicken Chili We’ve been getting a lot of feedback as we do about this same time each year on how much people love my mother in laws recipe, so here ya go! The recipe is also located at meatchurch.com along with links to the YouTube video. Plus this gives the bean lovers something to brag about. 😜 While I don’t prefer beans in my traditional Texas style chili, I do love them in my MiL’s recipe here. πŸ™‹πŸ½β€β™‚οΈ Ingredients: β€’ 3-4 C cooked chicken, chopped (I start with a Holy Gospel smoked chicken) β€’ 1 large yellow onion, chopped β€’ 3 cans Great Northern beans β€’ 1, 32 oz carton chicken broth (or slightly less for a thicker soup) β€’ 1 can Rotel diced tomatoes & green chilies β€’ 1, 10oz block of pepper jack cheese, cubed (sub your fav cheese if you don't like the heat) β€’ 2 tsp cumin β€’ 2 T Meat Church Texas Chili Seasoning Instructions: β€’ Mix all ingredients in a dutch oven or slow cooker. If using a smoker or pellet grill β€’ Prepare your smoker at 225Β° using hickory or pecan wood. β€’ Place the dutch oven in the smoker. Cook for 3 - 4 hours uncovered. Stir at least every hour. β€’ Cover and simmer to hold until supper time. If using a slow cooker β€’ Cook on medium for 3 - 4 hours. You can increase to a hotter setting if time is not on your side as these ingredients are already cooked. You are simply trying to break down the chicken and meld the flavors. Garnish: Top each serving with shredded cheese. We like to add freshly cracked black pepper and a dollop of sour cream. This is great served with corn bread.
