Kōnā
COPENHAGEN
20th - 24th September
There’s certainly no shortage of trendy, counter-seated restaurants in Copenhagen but none are quite like @konacph. Set up in 2020 by Philip Inreiter, owner of the city’s hottest ramen joint, Slurp, the idea was to bring a slice, or rather two different slices, of Japan to Copenhagen in the form of a dual-concept restaurant. Upstairs, the team slings out comforting Japanese izakaya classics including perfectly layered katsu sandos, miso soup and fried chicken so good that it practically has its own fan club, while downstairs is a chance for head chef Philip Limpl to really show off, with an omakase (‘chef’s choice’) tasting menu.
Known to his pals as JP, head chef Philip’s passion for cooking started young, in his hometown of Feldkirch, Austria. When he wasn’t out frolicking in the Austrian alps, he was breaking down entire bulls, cows and wild game with his bare hands to make charcuterie. At the helm of Kōnā since April 2021, JP draws on his time working in kitchens across the continent to create dishes which playfully marry Japanese and European flavours. Think grilled padron peppers with togarashi, scallops with brown butter and miso, and pistachio gelato with aged soy sauce.
JP joins us for a week in September with an epic, 7-course Japanese omakase menu created specially for the occasion. Highlights include ‘Dashi, Ginger, Smoked Eel’, ‘Raw Langoustine, Rose, Caviar and ‘Trout Roe, Egg Yolk, Koshihikari Rice, Miso Soup’. Never one to disappoint his fans, he’ll also be including Kōnā’s famous chicken katsu sando from the izakaya menu, because, well, need we say more than chicken katsu sando?
