Sushi Sawada in Ginza is a must-visit every trip to Tokyo. I have been going since 2006. Today’s lunch featured atypically fresh (2 days aged) maguro from Shiogama (153 kg): akami zuke; chiaigishi; shimofuri toro; dandara toro; and kama toro. Highlights were akagai, mirugai, aburi kama toro; murasaki uni from Karatsu; bafun uni from Rausu; and tairagai.
