Your next favorite side dish: Mediterranean Roasted Potato Salad š
Dressing ingredients:
š± 2 cloves minced garlic
š± zest of one lemon
š± 1 tbsp fresh basil, cut into ribbons
š± 2 tbsp fresh dill, roughly chopped
š± 1ā4 cup olive oil
š± 1 tbsp red wine vinegar
š± 1 tsp mustard
š± salt & pepper
Salad ingredients:
š± 3 cups roasted potatoes (about 3-4 potatoes roasted)
š± 1 cup cherry tomatoes
š± 1ā2 cup kalamata olives
š± 3ā4 cup feta (regular or vegan)
š± 1ā2 avocado, cut into small pieces
š± 1ā2 cup Go Raw Sprouted Pumpkin Seeds
Steps:
1. In a large mixing bowl, combine all dressing ingredients and whisk until combined. Taste and adjust flavors as needed.
2. Add all salad ingredients except avocado and pumpkin seeds and toss. Finish with the last two ingredients and enjoy.
