Years ago when cracks and rough textures were *not* an acceptable way to decorate cakes, when dried and wilted flowers (even sugar) were unwelcome as adornment on food, I made a turn. I had resisted so long the effects of my dry kitchen, as it cracked my fondant during the drape. I had compartmentalized my love of aged textures and dried florals, believing they had no place on a fresh cake intended to be eaten. But when I surrendered to myself as an artist, I was then able to surrender to my medium, to my environment, and embrace the unexpected. The real empowerment came when I was ready to show YOU the erosions, the course rawness, the scraped sugar, and to say, “this is beautiful”.
At first, only a few of you agreed, but now, almost ten years later, rough and aged textures are a regular standard of the cake world.

THIS is what we focus on in my workshops: YOUR unique form, and the gifts you have to develop and offer. When your skills have only gotten you so far, you seek to know yourself as an artist...beyond just in name. Then innovation becomes a regular occurrence, from the micro decisions of each cake to the larger influences on the field.
