Cream Cheese Cinnamon Pumpkin Bread🎃
This recipe is not on my typical healthy program, but with the Dawgs on top during bye week🐾, it’s time to live a little🤤
The key to this one is the pumpkin butter. TJ’s was sold out, so I made mine from scratch:
1 can pumpkin puree (15 oz)
1/2 cup brown sugar
1/3 cup apple cider or juice
1 tsp vanilla extract
1 tsp cinnamon
1 tsp pumpkin spice
Combine all ingredients in a saucepan and stir well. Bring to a boil, reduce heat, and simmer for 30-40 min until thicc like you like it.
Pumpkin Bread recipe:
1 cup pumpkin puree
3/4 cup melted butter
1/2 cup maple syrup
3 eggs
1 tbsp vanilla extract
3 cups all purpose flour
2 tsp baking powder
1/2 tsp baking soda
3 tsp pumpkin spice
1/2 tsp salt
8 oz cream cheese
1/2 cup cinnamon sugar
1 cup pumpkin butter
Honey butter topping:
4 tbsp butter
2 tbsp honey
Directions:
Preheat oven to 350F
In mixing bowl, stir together wet ingredients (I forgot pumpkin butter until later..shhh), and then fold in dry ingredients.
Butter bread pan
Pour half the batter into the bread pan, spoon teaspoons of cream cheese over batter, swirl cream cheese using a knife, sprinkle half cinnamon sugar over swirled cream cheese, add remaining batter to top off, and sprinkle the remaining cinnamon sugar to top off.
Bake for 40 minutes (I like to leave a gooey middle, so maybe 45-50 minutes for it to fully set), and mix honey and butter while waiting.
Remove from oven, top with honey butter, and get it while it’s hot👨🏻🍳💋
