Mackerel aged in salt water for 4 days, sliced then season with coffee oil, wasabi & kinome.
Tartare: Mackerel, otoro, fermented & semi dried strawberry, shiroita kombu, coffee ponzu & yuzu kosho.
Fermented strawberry & tomato water dressing, seasoned with lime juice & 10 years aged rice vinegar.
Radish oroshi, roasted coffee oil.
