Soup season is in full swing ✨
This creamy gnocchi chickpea soup has been on repeat at our house😍
It's going to be in my debut cookbook coming out in a few months but I won't make you wait that long to try this epic recipe:
INGREDIENTS
1 yellow onion, diced
5 cloves garlic, minced
1.5 cups veggie broth
1.5 cups plant milk (use canned coconut milk to make it creamier)
3 tbsp nutritional yeast
1 tsp salt
1 tsp dried rosemary
1/4 tsp black pepper
1/2 tsp crushed red pepper
2 cans chickpeas, drained and rinsed
16 oz gnocchi
2 cups baby spinach
DIRECTIONS
In a large soup pot, cook the onion and garlic over medium heat until soft, about 5 mins.
Add the broth, milk, seasonings and chickpeas. Bring to a boil.
Once boiling, add gnocchi and turn down heat to a simmer.
Cook for 5-7 mins until gnocchi is soft. Add spinach and cook for a few more minutes until it wilts.
Enjoy!
