It may officially be Fall but you can hold onto the last of Summer with this pumpkin seed pesto pasta salad 🌿✨
Pesto Ingredients:
1⁄2 cup Go Raw Sprouted Pumpkin Seeds
2 cloves garlic
2 cups basil
juice of 1⁄2 Meyer lemon
1 tbsp nutritional yeast
big pinch of salt
1⁄2 cup olive oil
Pasta salad ingredients:
12 oz pasta, cooked, cooled, and tossed in olive oil
arugula
heirloom tomatoes
marinated artichokes
cucumber
cherry tomatoes
kalamata olives
mozzarella balls (sub in avo to make it vegan!)
chili flakes
Steps:
1. Add all pesto ingredients to a food processor and blend to your desired texture. Taste and adjust flavors to your personal preference.
2. Combine all salad ingredients in a large bowl. Add in pesto and stir until well combined.
