š¶PEPPER PASTAš¶
INGREDIENTS
(for about 500 g pasta)
3 peppers, cut into quarters (or use store bought roasted peppers)
1 onion, cut into quarters
1 garlic head
Oil / olive oil
Salt & pepper
1 block of silken tofu
1/2 cup tomato sauce
1 tbsp nutritional yeast
Pasta, cooked
INSTRUCTIONS
Preheat your oven to 190 c / 375 f.
Add the peppers & onion into a baking tray. Place the garlic head on a piece of aluminum foil, drizzle oil and sprinkle salt and pepper on the garlic, pepper and onion. Cover the garlic, and place it on the baking tray. Roast in the oven for about 30 minutes or until the veggies are soft.
Remove the roasted bell pepper and add them to a tin foil and wrap to close - after 10 minutes peel the skin off.
Add all the veggies to a blender along with the tofu, tomato sauce, nutritional yeast, salt & pepper. Blend until smooth and creamy.
Pour on top of your cooked pasta, mix and ENJOY
