Chocolate pumpkin breakfast cookies πͺ π
Ingredients:
2 1β2 cups oats
1 cup Go Raw Sprouted Pumpkin Seeds
1 tsp salt
1 tsp pumpkin pie spice
1 tbsp hemp seeds
1 tbsp flax meal
1 cup pumpkin puree
1/4 cup cashew butter (or any nut or seed butter)
2/3 cup maple syrup
2 tbsp coconut oil
1 tsp vanilla extract
1β2 cup chocolate chips
1. Preheat oven to 350 degrees.
2. Toss the oats with salt, pumpkin pie spice, pumpkin seeds, hemp seeds and flax meal.
3. In a saucepan on low heat combine pumpkin, coconut oil, nut butter, maple syrup, and vanilla. Add the pumpkin mixture to the oats and stir until combined. Stir in chocolate chocolate chips.
4. Scoop about 1 heaping tbsp onto parchment-lined sheet. Flatten with a rubber spatula or back of a spoon. Sprinkle each cookie with a few more chocolate chips & salt. Bake for 10-12 minutes. We recommend storing a batch in the freezer and popping one in the toaster oven when ready to enjoy!
