Carrot & Sweet potato soup 🍜 If you’re feeling a bit under the weather this is the soup for you 🤧 The truth is you can’t boost your immune system with food or supplements - [& that’s not something we necessarily want to do -] but certain nutrients can support it to function normally. A diet which includes enough energy and a good variety of nutrients (including vitamin C, vitamin A and zinc) is a vital component of this. To find out more about foods that can support the immune system head over to our education hub and search through our library of resources on immunity [link in bio] Recipe 📝 1 tbsp olive oil 1 onion, chopped 2 garlic clove, crushed 4 carrots, peeled & chopped 2 sweet potato, peeled and chopped 5cm fresh ginger, peeled & sliced 1 litre vegetable stock salt & pepper to taste Method 👩🏻‍🍳 1️⃣Heat the oil in a large pan. Add the onion and cook gently for 4-5 mins until soft, then add the garlic for another minute. 2️⃣Next add the carrots, sweet potato and ginger and mix together then pour the stock on top. Bring to the boil, reduce the heat and simmer for 20 minutes. Season with salt and pepper 3️⃣Using a hand blender or food processor, blend until smooth.
