What’s fancier than ‘caviar’ and crème fraiche? I’ll wait. These gorgeous beet-dyed deviled eggs are a fun way to level up your deviled egg game and elevate this humble Easter appetizer. RECIPE: 6 large eggs 2tbs mayonnaise 1 tbs crème fraîche, divided 1 tsp dijon mustard 1⁄2 teaspoon fine sea salt 1⁄4 teaspoon freshly ground black pepper 1/2 small shallot, finely minced 100% beet juice Hard boil eggs by placing eggs into a pot of cold water. Bring to boil, cover and remove from heat. Allow to stand for 14 minutes. Remove to an ice bath and peel. Halve eggs, reserving yolks to a bowl. Place egg whites into a container (warning, will stain) and cover whites with 100% beet juice. Refrigerate for about an hour. Remove whites and rinse before serving. Meanwhile, mix eggs, crème fraiche, Dijon, mayo, shallot, and salt and pep. Spoon or pipe mixture into egg halves. Top with a spoonful of mustard seed caviar and crumbled prosciutto bacon bits. Proscuitto Bacon Bits: Place prosciutto in dehydrator at 195 for 3 hours. Alternatively, bake the prosciutto at the lowest temp. your oven can go, until very crispy. Grind or crush prosciutto and reserve. Pickled mustard seed caviar: 1⁄2 cup yellow mustard seeds 3⁄4 cup white wine vinegar Pinch kosher salt 2 tbs honey 1 tsp ground mustard .5 teaspoon red pepper flakes 3 tbs white wine vinegar (to finish) 1 tbs finely minced shallots (to finish) Rinse the mustard seeds and add drained seeds along with the 3/4 Cup of white wine vinegar and salt to a saucepan. Allow the seeds to soak at room temperature for an hour. Add in the honey, ground mustard, and red pepper flakes. Bring the mixture to a simmer over medium. Stir frequently for 6-7 minutes, until most of the liquid has evaporated. Pour the mixture into a container to cool. Once at room temp, stir in the 3 tbs of white wine vinegar and shallots.
