Ingredients 4 cloves garlic minced 1 tbsp curry powder 1 tbsp tumeric 1/4 tsp ground ginger 1/4 tsp salt 1 can diced tomatoes 1 can light coconut milk 1 can chickpeas 1 cup red lentils 2 Yukon potatoes, chopped Water to cover everything Fresh cilantro Simmer for about 20 min until the potatoes are soft and the lentils are cooked!
