INGREDIENTS 6-8 RUSSET POTATOES PEELED 2 TBSP AVOCADO OIL OR OTHER HIGH SMOKE POINT OIL 4 TBSP BUTTER 6 CLOVES GARLIC, SMASHED 3 SPRIGS ROSEMARY 3 SPRIGS THYME, 1 SPRIG RESERVED FOR GARNISH 1.5 CUPS CHICKEN STOCK SALT/PEPPER TO TASTE CHIVES FOR GARNISH RECIPE PREHEAT OVEN to 400 DEGREES F CUT PEELED POTATOES INTO 1-2" ROUNDS CUT INTO DESIRED SHAPE SEAR ON MEDIUM-HIGH IN HOT OIL UNTIL GOLDEN BROWN ON ONE SIDE THEN FLIP REDUCE HEAT TO MEDIUM AND ADD BUTTER, GARLIC, ROSEMARY, THYME SIMMER FOR 2-3 MINUTES ADD CHICKEN STOCK 2/3 THE WAY UP THE POTATOES BRING TO A BOIL THEN PLACE IN OVEN FOR 20 MINUTES OR UNTIL TENDER PLATE POTATOES STRAIN AND REDUCE PAN SAUCE UNTIL THICK AND POUR OVER POTATOES GARNISH WITH THYME AND CHIVES #potatoes #fondantotatoes #sidedishrecipe #recipes
