Surf & Turf on the @weberuk Traveler grill. Yesterday we took the @landrover_belfast Defender on a trip to the shores of Strangford lough near Portaferry to take in the scenery & of course cook some lunch which was a wonderful surf & turf platter. We cooked a wonderful ribeye steak from @corriesonthefarm seasoned with @sucklebuster SPG cooked to a perfect medium temperature of 54°c To go with the steak we cooked up some mussels, langoustines, and prawns kebabs in a garlic & herb butter. For the mussels - Clean of any debris in fresh water & discard any open or damaged shells. Finely chop garlic, shallots & celery Heat some oil in the pan & start to soften the veg. When softened add the mussels Mix & add a generous amount of white wine. (About 1/3-1/2 bottle. Use some fragrant herbs to form a bouquet garni we used thyme, bay leaves and parsley. Add & mix. Cover with a lid or some foil. Cook for approximately 5mins or until all the mussels have opened. Add double cream approx 200ml combine and serve. For the langoustines you can either cook them whole or split them. If you split them start to cook shell side down. We basted these during the cook with some @dromonamakesit butter mixed with finely chopped garlic & parsley. The prawns were simply skewered, grilled and basted in the butter. We served everything with lovely toasted sourdough wedges.
