This is your sign to make a steak. Recipe below! Chimichurri Ingredients: 2/3 cup Parsley or Cilantro/Parsley mix 2 TBSP Oregano 3 Cloves Garlic 1 Small Shallot 1-3 Small Chilis (I used birds eye but feel free to use Fresno or whatever is available to you!) 3/4 cup Extra-Virgin Olive Oil 1/2 cup Red Wine Vinegar Salt/Pepper to taste Instructions: Finely chop all ingredients and combine. The longer this sits, the better it will taste! Use as marinade or sauce. Great on steak, chicken, fish, veggies - really anything! Skirt Steak: Ingredients: 1 lb skirt steak 1/2 cup Extra virgin olive oil Salt/Pepper to taste 2 Cloves Garlic Instructions: Heavily salt steak and let sit in the fridge on a wire rack for at least half an hour then remove from fridge and pat dry. Re-season steak with a bit more salt, pepper and rub with smashed garlic. Coat steak in olive oil and let sit until it reaches room temp (approx. half hour). Sear steak on ripping hot cast iron or carbon steel skillet for 2-3 minutes on each side until 130 degrees F internal then let rest for another 4-6 minutes. Steak should come up to 135 degrees F for medium rare. Cut steak AGAINST the grain and serve with Chimichurri. Enjoy! #steak #skirtsteak #chimmichurri #mediumrare
