Spicy Sun-Dried Tomato DressingπΆοΈ
This recipe is in my new cookbook Whole Food Plant-Based Weeknight Dinners! Available for preorder now (link in bio!). Yes, it has salads in it (IYKYK π) but I HAD to share this dressing because I've been enjoying it on repeat!
It's my current hyperfixation meal. I filmed this over a couple days because I've been having this dressing so much and it's just so prettyπ I can't stop taking video haha can you tell what's different with the salad between shots?π€π§
Here's the dressing recipe:
1β2 cup sun-dried tomatoes
1β2 cup canned light coconut milk
1β2 cup water
1 tablespoon Dijon mustard
1 tablespoon pure maple syrup
1 clove garlic
1β4 teaspoon salt
1β8 teaspoon black pepper
1β4 - 1 teaspoon cayenne powder, start with less and add more if you prefer spicier
Blend it all up and add it to your favorite salads!π
