I wanted my PBJ to have super fresh ingredients, so I went ahead and made salted peanut butter from scratch as well. Deciding which sandwich I loved most between toasted and not toasted was a tough one at first, but as I kept munching, there’s one that really had me! I will pin in the comments which one it was after you tell me your pick . I really hope you make this jam it was nothing like store bought jam in terms of taste and freshness! On your next grocery run, grab some black California grapes, I guarantee they will be sweet for snacking and for jam making. California grapes are so versatile, and the varieties available help make snacking that much more fun. The sugar inside grapes caramelizes well when placed over heat. #GrapesfromCA Recipe: 600g black California grapes 3 tbsp cane sugar 1 1⁄2 tbsp lemon juice In a medium sized pan set to medium heat, cook the above ingredients all together. Use a sturdy masher to mash down the grapes and release their juices. Cook for 20 minutes then lower your heat to medium-low and cook until the grapes have reduced into a jam consistency. Allow jam to cool before spreading over bread. Jam can last up to 4 weeks in an air-tight glass jar inside the fridge For the peanut butter, blitz 400g of unsalted roasted peanuts with 1 tsp of kosher salt in a high-speed blender. Start at a low speed then work your way up to a higher speed while stopping the blender every so often to scrape down the sides.
