🌻1 cup macaroni pasta
🌻1 cup broth of choice (we used chicken)
🌻1 cup cauliflower, chopped
🌻1/2 cup yam, diced
🌻2oz cream cheese, cubed
🌻1/2 cup milk
🌻3oz shredded cheddar cheese
🍁 Cook macaroni, cauliflower, yam and broth in rice cooker until pasta absorbs all of the liquid. Leave cauliflower and yam on top. It takes Roughly 10 mins if using hot broth using @bydash rice cooker.
🍁At this point pasta will be al dente. (I accidentally overcooked mine, but oh well. 😅) Remove cauliflower and yam. Put in blender. Add milk and blend.
🍁Pour mixture, cream cheese and cheddar cheese into pasta.
🍁Mix well and close Lid until cheese has fully melted, roughly 1-2 minutes.
🍁Enjoy!
You can definitely blend the veggies smoother than I did for those that are a tad more skeptical or still learning to enjoy different textures. Mine don’t mind the cauliflower clumps.
And I probably sound like a broken record BUT Now, yes “hiding” veggies in meals can get them to eat it this time. However, you’re only winning the short term battle. Think long term.
Add that veggie as a side dish on their plate for them to explore with the Mac and cheese. And if they ask what’s in the mac, BE HONEST! You can even begin to tell them once you’ve all started eat. Or better yet, let them help you make Mac. These are all ways to win the veggie battle in the long run ❤️
