Today I’m showing you how to make this easy and cozy split pea soup. It’s filling, warming and you can make this recipe vegan by using veggie broth instead of chicken broth.
Ingredients:
⁃ 1 Tbsp olive oil
⁃ 1 1/2 cups chopped yellow onion (1 medium)
⁃ 1 1/4 cups chopped celery (about 3 ribs)
⁃ 1 cup chopped carrots
⁃ 1 tsp minced garlic (~2 cloves)
⁃ 2 medium potatoes
⁃ 4 cups unsalted chicken broth
⁃ 4 cups water
⁃ 16 oz bag dried split peas, picked over and rinsed
⁃ 1 bay leaf
⁃ 1 1/2 tsp chopped fresh thyme, or 1/2 tsp dried
⁃ Salt and freshly ground black pepper
⁃ Chopped fresh parsley, for garnish (optional)
Chop veggies, and cook onion over medium heat with 1 tbsp oil until translucent. Add celery, carrots; cook for 5 minutes. Add chopped potatoes, rinsed split peas, garlic, chicken broth, water and spices; let simmer for ~1 hour. Remove bay leaf, garnish with parsley and serve!
