Crispy rice with spicy chickpea tuna 🍚 #ad Help beat food waste by making use of your leftover rice. Crispy rice is best made with leftover rice and I like to use @successrice Boil-in-Bag Jasmine Rice for my crispy rice. Success Rice cooks perfectly every time and it’s quick and easy to make. I love using it for easy meals. Crispy rice 2 cups leftover @successrice Jasmine Rice 1 tablespoon rice vinegar 1 tablespoon coconut sugar Chickpea tuna 1 can chickpeas - drained 1/4 cup vegan Mayo 2 tablespoons sriracha Pinch salt/pepper Juice from 1/2 lemon 1.) Mix together with rice, vinegar and coconut sugar. Press rice into a small rectangle about 1 inch thick on a sheet pan or baking dish lined with parchment paper or plastic wrap. Freeze for at least 30 minutes. 2.) Cut rice into 10 even rectangles. Add 1/4 cup oil to a skillet over medium high heat. Add rice in 4 pieces at a time. Cook until browned and crispy and then flip and cook again. Repeat for all pieces. 3.) Add all “tuna” ingredients to a bowl. Mix until combined and partially mash the chickpeas.
