Low fat/ High Protein Buffalo Chicken Mac & Cheese 🧀 🤤 510 cals per serving!
61g Carbs/ 7.5g Fat / 46g Protein
Inspired by @stealth_health_life with a couple tweaks to make it a little more low fat ! 😜
Recipe makes 5 servings so it’s perfect for a meal prep for the week!
Ingredients:
18 Oz chicken breast
325g brown rice pasta (or pasta of choice)
300g 1% cottage cheese
150g light cream cheese
24g nutritional yeast
30g honey
Soya sauce
Buffalo sauce
Garlic & pepper
Directions:
First marinate your chicken with Buffalo sauce, soy sauce, garlic & pepper (for this I just eyeballed & made sure chicken was covered)
While that’s marinating you can make the sauce! Combine cottage cheese, cream cheese, nutritional yeast & honey with 75g Buffalo sauce & blend. Set aside.
Throw your chicken on the BBQ & cook as you regularly would. While that’s on the barbi cook your pasta & drain. Once chicken is done chop it up into cubes & add to your noodles.
Then heat up your cheese sauce, add to the mix & enjoy 🤤
