Service Meeting
In my mind every restaurant has one (once, maybe even twice a day if you are lucky) but for the first two and a half years of the restaurant there was no meeting, it was mostly us running around between lunch, happy hour and into a dinner service trying to maintain me barking out changes to something that just changed 2 minutes ago because 👩🏼‍🍳 wasn’t happy with it, etc.
Luckily it was the same 10 people pretty much who worked both services so there wasn’t a lot to go over (or at least thats what I told myself). Honestly in a single service restaurant a service meeting is pretty easy to get to. It’s those damn lunch into dinner restaurants where the service meeting can be the white whale. Guests still seated, family meal, station change over, restocking, polishing - all of the things that can get in the way of sitting down for 15 minutes and going over the night, service points, beverage and just questions/concerns in general that gives the staff an opportunity to bring them up.
I feel very fortunate that for the last few years every day at 4:30 we can sit or stand and talk about the nights menu, about a certain ingredient being used, about someone’s meal at another restaurant they just had, about a wine they love to share with a guest, etc. Its the simple things that you once took for granted in another restaurant that you realize takes so much time and intent to get back to. Thankful for this team and their hard-work that we can do this because it makes this a better restaurant. Thanks to @carterhiyama for capturing it.
