another 1 pan dinner for ya from @munchinwithmaddie_! 🤩 RECIPE (gf, df): -2 @sizzlefishfit sockeye salmon filets, thawed -1/2 red bell pepper, thinly sliced -1/2 onion, diced -2 cloves garlic, minced -1 tsp fresh minced ginger (optional but recommended) -1 bag (10 oz) frozen cauliflower rice (can omit & instead serve with normal rice if preferred) -1 can full-fat coconut milk -3 tbsp thai red curry paste -cayenne or red pepper flakes to taste -1 tbsp low-sodium tamari (or soy sauce if not GF) -juice from 1/2 lime -toppings: chopped cilantro & green onion in a large pan over medium heat, add a bit of oil. add salmon skin side down and cook for 5 minutes. flip and cook for about another 2 minutes. you want it cooked most of the way through. remove salmon and set aside. add a bit more oil to the pan if necessary and then add in onion, bell pepper, ginger & garlic. sauté for a few minutes. add in the frozen cauliflower rice and sauté for a few more minutes until warm. add in the curry paste, coconut milk, tamari and cayenne and stir until combined. reduce heat to medium low and let simmer for about 5 minutes. stir in the lime juice. add the salmon back to the pan and let it finish cooking and warm up for a few minutes. serve with chopped cilantro & green onion! #munchinwithmaddie #salmonrecipe #salmondinner #curryrecipe #coconutcurry #easyandhealthy #healthydinnerideas #weeknightdinner #onepanmeal #lowcarbhighfat #glutenfreedairyfree #healthymealideas #cookwithme #cookingreels #asmrcooking #sizzlefishfit
