Serving up simple healthy lunches all January long ♥️
Protein packed pasta salad -
1. Cook 8oz chickpea pasta according to package instructions
2. Brown chicken sausage in a pan
3. Assemble pasta salad with cooked chickpea pasta, chicken sausage, 1/2 cup sun-dried tomatoes, 1/2 cup halved cherry, tomatoes, 2 tablespoons chopped fresh parsley, 2 chopped tablespoons fresh basil, 1/2 cup Parmesan, 2 tsp red pepper flakes
4. Toss pasta salad with sauce/dressing of choice and enjoy!
5. To make homemade sun-dried tomato pesto- in a food processor or blender combine 1 cup sun dried tomatoes, 1/2 cup sunflower seeds or pine nuts, the juice of 1/2 lemon, 2 cloves garlic, 1 tsp salt, 4 tbs fresh parsley, 1/2 cup-1 cup olive oil depending on your desired consistency and strength of food processor
