Replying to @erla_evie1234 FULL RECIPE ⬇️ INGREDIENTS: For the lamb: - 24oz lamb shoulder - 2 tbsp butter - 1 tbsp olive oil - 2 cloves minced garlic - 1⁄2 tsp dried oregano - 2 oz rice - 200 ml hot water for lamb - 60 ml hot water for rice - salt and pepper to taste For the Yogurt Mixture: - 4 eggs - Greek yogurt (FULL FAT) 2 cups - 4 tbsp melted butter - 4 tbsp all purpose flour - salt & pepper to taste - pinch of ground nutmeg on top DIRECTIONS: 1) Season lamb cubes with salt and pepper and sear in high heat with 2 tbsp melted butter and 1 tbsp olive oil, once its brown add 400 ml of hot water and simmer on medium heat for 20-30 minutes until the wate has cooked out and oil is reserved. 2) Add the uncooked rice to the lamb along with 1⁄4 cup of rice and simmer until rice is half cooked about 6-7 minutes 3) For the yougrt mixture, whisk 4 eggs, 2 cups of full fat yogurt in abowl. In a pan make your rue by melting 4 tbsp of butter and 4 tbsp flour and whisk in the pan on low heat until well combined and whipped. Slowly add to your yogurt mixture and whisk until well combined 4) Pre-heat oven to 350 and in a pan add the lamb mixture and evenly distribute into a bakin pan about 9’ in diameter for 4 servings (or in four personal ramekins like I did). Then layer the yogurt mixture on top. Add a dash of nutmeg and bake for 50 minutes. Top of Tave Kosi should be golden brown.
