Who loves a filthy burger? I'm often asked what's my favourite thing to cook. Sure, steak is up there, Thai food is up there, brisket and ribs sure hit the spot too. But there's something about a dirty burger that just keeps you going back for more! And this one was extra naughty with a sticky caramelised onion jam and a Mexican flavoured salsa, as well as Gruyere cheese and bacon. Oh, those patties are 170g a piece too. PURE FILTH. Here's the recipe if you want to give this a try! For the onions... 70g butter 2 finely sliced onions Salt 2tbsp honey 2tbsp cider vinegar Pinch of pepper 80ml apple juice 1/2tsp thyme Cook the onions in the butter for around 10-15 minutes. A pinch of salt helps draw out the moisture from the onions. Then add all other ingredients and continue cooking and stirring until they are thick and sticky For the salsa 2tbsp rapeseed oil 1 finely diced onion 1 tin chopped tomatoes Juice of half a lime Pinch of salt and pepper 2tbsp @spanglishasadero_official Ancho Chilli rub 2tbsp brown sugar Sweat down the onion in the oil for 5-6 minutes then add all other ingredients and simmer for around 8-10 minutes For the patties, you want minced beef with at least 20% fat. I've formed this in to 2x 170g balls. Get a griddle screaming hot, at least 250c. I've used my @arteflame for these burgers, it's such a joy to cook on. Smash the balls (reyyyy) on to the griddle then season with salt. After 2 minutes, flip, season with pepper then top with cheese. Splash of beer on the griddle then cover with a cloche for nice oozy melted cheese! Meanwhile, cook some streaky bacon until nice and crispy. Add one pattie on top of the other then top with the bacon. Stick it all on a lightly toasted bun, @stpierreeurope is my bun of choice. Then top with the salsa and the onion jam, stick the lid on top and get this in your gob! Enjoy! #burger #cheeseburger #smashburger #burgers #food #bbq #ukbbq #firecooking
