The leaves of the Rosebay #Willowherb ( aka #Fireweed ) plant can be #fermented and oxidises in the same way as #CamelliaSinensis resulting in a rich and deep flavoured and coloured brew. Luckily for us, this plant grows everywhere. Pick leaves July to early September when it's in flower. Roll between palms, leave to #ferment in a bowl for 3-5 days - the aroma will turn noticeably fruity. Spread on a cloth to dry then use as loose leaf #tea.
