Their restaurant offers Edomaesushi which involves an aging process that helps develop umami flavors and tender textures. A variety of methods are utilized to marinate, shimmer, or cure the fish. Their head chef, Chef Kou, is from Saitama, Japan and has spent years perfecting his skills in Edomaesushi. Sushi Teru offers two Omakase options (90 min seatings): Omakase A which features 4 appetizers, 9 pieces of nigiri, 1 handroll, and dessert and Omakase B which features 2 appetizers, 9 pieces of nigiri, 1 handroll, and dessert. I had an amazing experience during my visit. I started off with some amberjack, chutoro, and firefly squid and also immediately dived into some oyster with ponzu sauce, Hokkaido uni, and monkfish pate. Some dishes that also stood out to me was Chef Kou’s Chawanmushi and soup. The Chawanmushi included glutinous rice on the bottom for a distinct mouth feel and the comforting soup was flavored by kombu which was steeped for 12 hours. Chef Kou then offered stunning pieces of nigiri like golden eye snapper, gizzard shad, baby barracuda, black throat sea perch, more fresh uni, otoro, scallop, and saltwalter eel. The meal was finished off with a handroll with tuna and Japanese pickles and a coconut and green tea pudding for dessert.
